The scent

Envisaged around honey, toasted sesame, orange blossom, anise, spices, warm bread, dates, incense, mint.

These accords are creative hypotheses to be validated in the field and in the laboratory, not established observations.

Listed as a UNESCO World Heritage Site since 1981, the Fes el-Bali medina is described by the organisation as one of the most extensive and best-preserved historic towns of the Arab-Muslim world. Its lanes, workshops and houses are still lived in.

The story

Harira simmering before the breaking of the fast, chebakia with honey and orange-blossom water, the incense of the evening gatherings. RAMADAN À FÈS will only be composed from testimonies gathered from Fassi families, with their consent, and with respect for the spiritual meaning of the month.
